Also known by the wine-tasting term “empyreumatic”, these aromas come from roasting, and more generally from the browning of ingredients by intense heat.

The large Roasted family features many aromas, such as the browned gratin crust, freshly toasted bread, roasted nuts, such as almonds, hazelnuts, walnuts, pistachios and chestnuts. This family also includes caramel, just as it starts turning golden before getting brown, when its roasted aromas are at their strongest; and roasted coffee beans.
